In the heat of summer, hydration is key. With an established pantheon of tempting long drinks and plenty of room for experimentation, operators can create a real stir behind the bar.

The summer season is a time for holidays and letting one's hair down. When it comes to cocktails, customers are looking for something fun and refreshing. Bright colours, sweet and citrus flavours, and lots of ice to keep it cool are all things to bear in mind.

The look of summer long drinks is absolutely critical, as it will affect the decision-making of people who see them while sat in a sunny beer garden. 

Presentation is key - customers enjoy long drinks served with plenty of ice and fruit garnish. Ice is also a critical factor when it comes to providing cooling drinks in the summer sunshine. Operators shouldn't skimp on how much ice they put into their long drinks, since a smaller amount of ice melts more quickly. Instead, they should invest in a quality icemaker, ensure that it is working well and well-maintained, and train staff about the styles and benefits of the type of ice available.

"If your ice demand is high and you only have space for a small machine, bag the ice and store it in a freezer until required," advises Bob Wood, director of DC Warewashing & Icemaking Systems. "This will help you overcome peak demand times and save you money too".
