Just imagine what proof of previous use of a wine glass, steak knife or dinner plate looks like - fingerprint smudges, lipstick marks and smears of sauce. If you found these on the table or on anything served to you, what would you think about the rest of the establishment? With more and more diners eating while clutching their smartphones, the risk of being named and shamed on social media should be prevented as much as possible.

Granted, there is such a thing as human error, which you can forgive if it's a one-off occurrence. But the current glasswashers and dishwashers on the market mean that such mistakes should very rarely happen.

"Warewashers are big consumers of water, power and chemicals," says Glenn Roberts, chair of CESA. "Look for machines that are effective in terms of their cleaning results, but that also minimise the use of consumables. Machines that use less water will also use less power, since most of the power required is for heating the water."

This has made efficiency a driver for warewashing developments. As a result, manufacturers have implemented features that decrease or make better use of energy and chemicals.

"A steam heat recovery system fitted to any passthrough or hood-type dishwasher can offer energy cost savings of up to 25%", adds Bob Wood, director of DC Warewashing & Icemaking Systems. "It also improves the working environment by removing and utilising nearly all of the steam created during the wash cycle, and removes the need to have an extraction canopy."
