Without decent wash-up facilities the school
dinner service would come to a standstill so
it's well worth taking time to create the optimal
design and invest in quality kit.

The mere prospect of the aftermath of a busy service is daunting for any caterer, but get the set-up right and it's plain sailing. There are a myriad of machines on the market designed to make the post-service clear-up process a doddle and the model school caterers choose will entirely depend on their particular set-up.

"In response to the challenges faced by school catering operators in coping with fluctuating levels in demand, new double-hood passthrough dishwashers have been introduced," explains Bob Wood, director, DC Warewashing and Icemaking Systems. "These machines bridge the gap between a single-hood passthrough and a mini-rack conveyor."

From more modest under counter machines through to passthrough and rack conveyor models - it's essential to seek advice to ensure you get a machine that's up to the task. Particularly as the lines have become more blurred in terms of categorisation over the years, with the introduction of hybrid models to make caterers' working day less of a challenge.

"It's important that operators familiarise themselves with each machine's in-built features and also some of the optional add-ons," says Wood. "Be careful not to purchase an under- or over-specified machine. An over-specified machine will have rarely used capacity and features which aren't required and come at a price.

An under-specified machine will be detrimental to your catering operation not only in terms of current capacity and performance but also in terms of the future." The entire wash process should be considered before purchase; from storing dirty dishes to basket storage and waste. Creating a system that allows every process to be carried out quickly and efficiently will pay dividends in terms of workflow down the line.
